8vo (230x150 mm). 264 pp. With 32 mostly colour lithograph plates (of which 5 hand coloured), 12 woodcut illustrations. Original printed wrapper withbound (corners repaired, minor tear, some spotting).
Contemporary half calf, richly gilt spine in compartments, title labels, sligthly worn and rubbed, upper edge gilt otherwise untrimmed. Text partly foxed. Signature on flyleaf.

First edition. Pasteur discovered that fermentation in wine occured via micro-organisms. The important publication of these works led to the widespread practice of heat sterilization of wine and vinegar.
